Vegetarianism is increasingly common, with the majority being 'lacto-ovo vegetarians', meaning that only products where no animal has been killed are eaten or vegans who will eat no animal derived products at all including dairy products.
Typical ingredients in vegetarian dishes would include cereals ( including bread, pasta, rice, maize/corn, all grains, couscous, corn flakes, seitan, etc.), legumes which form the main replacement for animal products and include beans, soy and soy products (tofu, soy milk, TVP), chickpeas, peas and lentils, with other mainstays being vegetables, fruits, nuts, seeds, mushrooms, spices and oils.
Generally it is food that can be divided into two types, dishes that are tradtionally vegetarian and those with a meat analogue which is using a meat substitute in dishes that traditionally contained meat.
Vegetarian dishes often take influences from other cultures where vegetarianism is common due to religious or agricultural reasons, making for a varied and eclectic cuisine.
